Students in my 6th grade Technology class are applying and improving their skills within a "real" project; a school-wide chess tournament. Their desktop regimen includes creating letters, handbills, and score sheets. They will also be writing and emailing 30-second spots for our school television broadcasts (we'll be visiting that tech-rich facility), and developing story boards to plan one-minute videos for that broadcast that we will shoot and edit as a group.
It is also an opportunity for them to envision a project, prioritize tasks within a schedule, create and meet their own deadlines, and maintain a level of quality suitable for a public event.
